Din knew loving a Jedi was a bad thing. Their people were enemies but he just couldn't help himself. Ahsoka was a similar soul to his. He couldn't help saying I love you in different ways. She wouldn't know would she? He wasn't actually saying it out loud and people misinterpret things all the time. Actions can have different meanings all the time. She would never know.
Ahsoka had a feeling that Din had feelings for her. She didn't know how to feel herself. Did she leave him to stay with the beliefs she knew all her life? Or did she give in to the attachments that she knew would one day break her?
She came to her decision. Sometimes, you just needed to say it without words.
